Small, bone-in lamb shanks cut from pasture-raised Finnsheep and Texel cross lambs. These shanks are rich in connective tissue and collagen, making them well suited for slow, moist cooking methods that allow the meat to become tender and deeply flavorful.
Because shanks are smaller, they are best used as part of a dish rather than as a standalone entrée. Ideal for stews, braises, soups, or multi-shank preparations where the bone and marrow contribute body and depth to the broth. They also work well combined with vegetables, beans, or grains for nourishing, slow-cooked meals.
Each package is vacuum sealed and frozen to preserve quality and freshness.
Pasture-raised and finished on a custom, corn- and soy-free ration.
