Lamb Lollipops

These lamb lollipops are frenched rib chops, cut from the rack and trimmed to expose the bone for elegant presentation and easy handling. Naturally tender and mild, they offer a refined lamb flavor that is clean and well balanced rather than gamey.

Raised on open pasture, our Finnsheep and Texel cross lambs benefit from both delicate flavor and excellent muscling. In the final 90 to 120 days, they are finished with a small amount of our farm-mixed, barley-forward whole-grain blend to gently enhance marbling and depth of flavor without overpowering the meat’s natural character.

Ideal for quick searing, grilling, or roasting, lamb lollipops are well suited to simple preparations that highlight their tenderness and clean taste.

Each package is vacuum sealed and frozen to preserve quality and freshness.
Pasture-raised and finished on a custom, corn- and soy-free ration.
